Barmer: Which is the sweet that looks like a beehive? You will instantly say “Ghevar”. When these honeycombs without honey come out after dipping in the syrup, the food lovers start drooling. Occasions like Teej, Gangaur and Rakshabandhan are considered incomplete without Ghevar. Its taste and texture are both unique.
In the month of Sawan, along with rain, swings, and the sweet smell of soil, the sweetness of Ghevar is also very special. Just like Solah Shringar has a special significance in Hariyali Teej, Ghevar has a special significance in Barmer, the border area of western Rajasthan. The culture and traditions of India are famous all over the world. Hariyali Teej festival is a part of this, which is celebrated with great pomp in Rajasthan.
On the day of Hariyali Teej, Ghevar is prepared and offered to Goddess Parvati and Lord Shiva. Ghevar is prepared from a mixture of milk, flour, ghee, sugar, saffron, almonds and cashews. Kamal Singhal, owner of Jodhpur Mishthan Bhandar, says that a piece of Ghevar weighing half a kilo is available at his place, which is quite popular.
Kamal Singhal says that Ghevar is a traditional sweet, which has been in existence for the last several decades. Apart from Rajasthan, it is also popular in Madras, Mumbai, Bangalore, Gujarat. He says that on Hariyali Teej, it is sold up to 80 percent in comparison to other sweets. The most special thing is that after making it, it is decorated with dry fruits in such a way that one feels like eating it as soon as one sees it. The price of Ghevar available here is Rs 480 per kg.
This sweet is like bee jam. It is made from ghee, flour and sugar syrup. Later a layer of rabri is applied on it. This increases the taste of the sweet manifold. Mostly creamy ghevar is being sold on Hariyali Teej and it is decorated with dry fruits, which remains the first choice of the people.
